Meatloaf Full Recipe


Full recipe. You can also make this for two.

In a large bowl combine
  • 1 finely minced onion
  • 2 eggs
  • 1/4 cup Diana's Spicy BBQ Sauce (or ketchup)
  • 1/2 cup breadcrumbs (or oatmeal)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Mix it all up and then slowly mix in
  • 1 pound ground pork
  • 1 pound ground beef

Don't mix beef too aggresively. When mixed sufficiently, further squish it all together using your hands. Press into 8 x 6 x 2 (1.5 quart) glass pan. In a small bowl combine:
  • 1 tbsp light brown sugar
  • 1/4 cup Diana's Spicy BBQ Sauce (or ketchup)

Then smear the goo over the top of the meatloaf. Stick a probe in it and place in the cold oven. Approximately an hour and a half before you plan to eat, turn the oven on at 350 and bake meatloaf

about an hour fifteen at 350

The probe should read at least 160, maybe 180, and if you dig around you'll get varying opinions on what the temp actually is. When you're pretty sure it's not likely to give you e-coli turn the oven off, leave the meatloaf in there and carry on with your potatoes. You can't really overcook meatloaf but you can sure undercook it.
